Gattafin (Fried Ravioli)

Gattafin, a delightful gem from the Italian coastal region of Liguria, translates to 'fried ravioli' and serves as a beloved appetizer that evokes the essence of Italian culinary tradition. This dish features a delicate, thin pasta dough enveloping a savory filling of herbs and cheese, all fried to golden perfection. Each bite offers a crispy exterior that gives way to a burst of flavor, making Gattafin an irresistible starter for any occasion. Its origins trace back to the rustic kitchens of Liguria, where locals would use fresh, seasonal ingredients, embodying the Italian philosophy of simple yet delicious food.

Serves 4

Ingredients

All-purpose flour
2 cups
Eggs
2 large
Salt
1/2 teaspoon
Vegetable oil
for frying
Olive oil
2 tablespoons
Parmesan cheese
1 cup, grated
Garlic
2 cloves, minced
Fresh parsley
1/4 cup, finely chopped
Fresh marjoram
2 tablespoons, finely chopped
Salt
to taste
Pepper
to taste

Instructions

  1. In a large bowl, combine the all-purpose flour, eggs, and salt. Knead the mixture until it becomes smooth and elastic, about 10 minutes.
  2. Cover the dough with a cloth and let it rest for 30 minutes at room temperature.
  3. While the dough is resting, prepare the filling. In a bowl, combine the minced garlic, chopped parsley, chopped marjoram, grated Parmesan cheese, olive oil, and season with salt and pepper to taste. Mix well until fully combined.
  4. After the dough has rested, roll it out into a thin sheet using a pasta machine or rolling pin. Aim for about 1/16 inch thickness.
  5. Using a round cutter, cut out circles from the rolled dough, approximately 3 inches in diameter.
  6. Place a teaspoon of the filling in the center of each dough circle. Fold the dough over to create a half-moon shape, pressing the edges firmly to seal. You can use a fork to crimp the edges for an extra decorative touch.
  7. Heat vegetable oil in a large frying pan over medium heat. Once hot, carefully add the prepared Gattafin, frying in batches to avoid overcrowding.
  8. Fry until golden brown and crispy, about 3-4 minutes per side. Remove from the oil and drain on paper towels.
  9. Serve the Gattafin warm, with a side of marinara sauce or a drizzle of balsamic glaze for added flavor.

Tips

  • 💡 For a twist, try adding cooked spinach or ricotta cheese to the filling for extra flavor.
  • 💡 Pair Gattafin with a light salad or antipasto platter for a complete Italian meal.
  • 💡 Make the dough ahead of time and refrigerate it for up to 24 hours for convenience.
