German Potato Pancakes (Reibekuchen)

- 4 medium, peeled and grated Potatoes
- 1 medium, finely chopped Onion
- 2 large Eggs
- 1/4 cup All-purpose flour
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- for frying Vegetable oil
- for serving Applesauce
- for serving Sour cream

Instructions
- In a large bowl, combine the grated potatoes, chopped onion, eggs, flour, salt, and pepper. Mix until well combined; the mixture should hold together but not be too thick.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. The oil should be hot enough that a small amount of the mixture sizzles when added.
- Scoop a generous spoonful of the potato mixture into the skillet, flattening it gently with the back of the spoon to form a pancake about 1/2 inch thick.
- Cook the pancake for about 3-4 minutes on each side, or until it is golden brown and crispy. Adjust the heat as necessary to prevent burning.
- Transfer the cooked pancakes to a paper towel-lined plate to drain any excess oil. Repeat with the remaining potato mixture, adding more oil as needed.
- Serve the pancakes warm with applesauce or sour cream on the side.
