Instructions
- In a large pot, combine the goat meat, onion, garlic, ginger, Scotch bonnet peppers, cayenne pepper, crushed black peppercorns, crushed cloves, bay leaves, thyme, and salt.
- Pour in the water, ensuring that it covers the meat and other ingredients. Bring the mixture to a boil over high heat.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1 hour or until the goat meat is tender. During this time, skim off any foam that rises to the surface.
- When the meat is tender, stir in the chopped cilantro and lime or lemon juice. Let the soup simmer for an additional 5 minutes to allow the flavors to meld together.
- Serve your Nigerian Goat Meat Pepper Soup hot, ideally accompanied by a side of rice or flatbread. Enjoy the warmth and comfort of this flavorful soup.
Tips
- For a less spicy soup, de-seed the Scotch bonnet peppers before chopping them.
- You can use lamb or beef as alternatives to goat meat if it's not readily available in your area.
