Instructions
- Begin by preparing the ramen noodles as per the package instructions. Once cooked, drain and set aside.
- In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté until they release their fragrant aroma, about 1 minute.
- Pour in the chicken broth, soy sauce, and mirin to the pot, stirring well. Bring this mixture to a boil.
- Lower the heat to a simmer and add the shredded chicken, sliced shiitake mushrooms, julienned carrot, and halved baby bok choy. Allow this to simmer for about 10 minutes, enough time for the flavors to meld together beautifully.
