Instructions
- In a large pan or skillet, heat the vegetable oil over medium heat.
- Add the sliced onions and sauté until they turn golden brown, about 5-7 minutes.
- Stir in the minced garlic, grated ginger, and chopped green chilies. Sauté for another minute until fragrant.
- Add the chicken pieces to the pan and cook, stirring occasionally, until they are browned on all sides, about 8-10 minutes.
- Mix in the sliced bell peppers and cook for an additional 2-3 minutes until they start to soften.
- Incorporate the chopped tomatoes and cook until they break down and become soft and mushy, about 5 minutes.
- Sprinkle in the turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Stir well to combine all the ingredients.
- Continue cooking for 5 minutes, stirring occasionally. If the mixture is too thick, add a little water to reach your desired consistency.
- Finally, add the garam masala and mix well. Allow the curry to simmer for another 5 minutes to let the flavors meld together.
- Garnish with fresh coriander leaves before serving.
Tips
- For added depth of flavor, marinate the chicken in yogurt and spices for 30 minutes before cooking.
- Feel free to add other vegetables like carrots or peas to enhance the nutrition and texture.
- Serve with a side of cooling raita (yogurt sauce) to balance the heat.
