
Jicama and Pineapple Coleslaw
This refreshing coleslaw combines the crispness of jicama with the sweetness of pineapple for a tropical twist.
Ingredients
- Black pepper (1/4 teaspoon)
- Salt (1/2 teaspoon)
- Honey (1 tablespoon)
- Lime juice (2 tablespoons)
- Cilantro (1/4 cup, chopped)
- Carrot (1 medium, grated)
- Red cabbage (1 cup, shredded)
- Pineapple (1 cup, diced)
- Jicama (1 medium, peeled and julienned)
Instructions
- In a large bowl, combine the jicama, pineapple, red cabbage, carrot, and cilantro.
- In a small bowl, whisk together the lime juice, honey, salt, and black pepper.
- Pour the dressing over the coleslaw mixture and toss to coat evenly.
