Instructions
- In a shallow dish, combine almond flour, salt, and black pepper. Mix well.
- Dredge the chicken breasts in the almond flour mixture, ensuring they are well-coated. Shake off any excess.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook until golden brown on both sides, about 4-5 minutes per side. Once cooked, remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute.
- Add chicken broth, lemon juice, and capers to the skillet. Stir well to combine and bring the mixture to a simmer.
- Let the sauce simmer for 2-3 minutes, until slightly reduced.
- Stir in the butter, allowing it to melt and fully incorporate into the sauce.
- Return the chicken breasts to the skillet, basting them with the sauce. Cook for an additional 2-3 minutes, or until the chicken is cooked through.
