Ingredients

  • Coconut oil (2 tablespoons, melted)
  • Paprika (1/2 teaspoon)
  • Garlic powder (1/2 teaspoon)
  • Salt (1/2 teaspoon)
  • Unsweetened shredded coconut (1 cup)
  • Coconut flour (1/2 cup)
  • Egg (1, beaten)
  • Large shrimp (1 pound, peeled and deveined)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a shallow bowl, combine the coconut flour, shredded coconut, salt, garlic powder, and paprika.
  3. Dip each shrimp into the beaten egg, then coat it in the coconut flour mixture, pressing gently to adhere.
  4. Place the coated shrimp on a baking sheet lined with parchment paper.
  5. Drizzle the melted coconut oil over the shrimp.
  6. Bake for 15-20 minutes, or until the shrimp are golden brown and crispy.
