Instructions
- In a bowl, combine minced garlic, chopped rosemary, chopped thyme, olive oil, lemon juice, salt, and black pepper to create the marinade.
- Rub the marinade generously all over the lamb ribs, ensuring each rib is well coated.
- Cover the marinated ribs with plastic wrap and refrigerate for at least 2 hours, preferably overnight to allow the flavors to fully penetrate the meat.
- While the ribs are marinating, prepare the mint yogurt sauce. In a bowl, mix together plain yogurt, minced garlic, chopped mint leaves, salt, and lemon juice until well combined. Set aside in the refrigerator to chill.
- Preheat your grill to medium-high heat, ensuring it's hot enough to sear the meat.
- Remove the lamb ribs from the refrigerator and let them sit at room temperature for about 30 minutes before grilling.
- Grill the lamb ribs for about 15 minutes on each side, or until they reach your desired level of doneness. Use an instant-read thermometer to check for an internal temperature of 145°F (63°C) for medium-rare.
- Once grilled to perfection, remove the ribs from the grill and let them rest for a few minutes before slicing.
- Serve the grilled lamb ribs hot, accompanied by the refreshing mint yogurt sauce for dipping.
Tips
- For an extra flavor boost, add a teaspoon of cumin or smoked paprika to the marinade.
- These lamb ribs pair beautifully with grilled vegetables or a fresh salad.
- If you don't have access to fresh herbs, dried herbs can be used, but reduce the quantity by half.
