Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the diced mangoes, blackberries, and 1/4 cup of sugar. Mix well and let it sit for 10 minutes to allow the flavors to meld together.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
- In a small bowl, mix together the milk, vanilla extract, lemon zest, and lemon juice until well combined.
- Pour the milk mixture into the flour mixture and stir until just combined. Be careful not to overmix.
- Transfer the fruit mixture into a 9x9-inch baking dish, spreading it evenly. Spoon the cobbler batter evenly over the fruit, covering it as much as possible.
- Bake for 35-40 minutes, or until the cobbler topping is golden brown and the fruit is bubbling.
- Remove from the oven and let it cool for a few minutes before serving.
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.
Tips
- For an extra kick of flavor, consider adding a pinch of cinnamon or nutmeg to the fruit mixture.
- You can substitute other fruits, such as peaches or strawberries, for a different flavor profile.
- If using frozen blackberries, there's no need to thaw them; just add them directly to the mixture.
