Nectarines
4, pitted and sliced
Plums
4, pitted and sliced
Granulated sugar
3/4 cup, divided
Cornstarch
2 tablespoons
Lemon juice
1 tablespoon
Vanilla extract
1 teaspoon
All-purpose flour
1 cup
Baking powder
2 teaspoons
Salt
1/4 teaspoon
Unsalted butter
1/2 cup, cold and cubed
Milk
1/2 cup
Turbinado sugar
2 tablespoons, for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the sliced nectarines, sliced plums, 1/2 cup of granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss the fruits gently until they are well coated.
  3. Transfer the fruit mixture into a 9x9-inch baking dish, spreading it evenly.
  4. In a separate bowl, whisk together the all-purpose flour, remaining 1/4 cup of granulated sugar, baking powder, and salt.
  5. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.
  6. Pour in the milk and stir gently until just combined. Be careful not to overmix, as this can make the cobbler dense.
  7. Drop spoonfuls of the cobbler dough over the fruit mixture in the baking dish. It’s okay if some fruit peeks through.
  8. Sprinkle the turbinado sugar evenly over the top of the cobbler for a delightful crunch.
  9. Bake in the preheated oven for 35-40 minutes, or until the fruit is bubbly and the cobbler topping is golden brown.
  10. Once baked, remove the cobbler from the oven and allow it to cool for a few minutes before serving.
  11. Serve warm, ideally with a scoop of creamy vanilla ice cream to complement the sweet and tangy flavors.
