Nectarine and Plum Cobbler

- Nectarines
- 4, pitted and sliced
- Plums
- 4, pitted and sliced
- Granulated sugar
- 3/4 cup, divided
- Cornstarch
- 2 tablespoons
- Lemon juice
- 1 tablespoon
- Vanilla extract
- 1 teaspoon
- All-purpose flour
- 1 cup
- Baking powder
- 2 teaspoons
- Salt
- 1/4 teaspoon
- Unsalted butter
- 1/2 cup, cold and cubed
- Milk
- 1/2 cup
- Turbinado sugar
- 2 tablespoons, for topping
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the sliced nectarines, sliced plums, 1/2 cup of granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss the fruits gently until they are well coated.
- Transfer the fruit mixture into a 9x9-inch baking dish, spreading it evenly.
- In a separate bowl, whisk together the all-purpose flour, remaining 1/4 cup of granulated sugar, baking powder, and salt.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.
- Pour in the milk and stir gently until just combined. Be careful not to overmix, as this can make the cobbler dense.
- Drop spoonfuls of the cobbler dough over the fruit mixture in the baking dish. It’s okay if some fruit peeks through.
- Sprinkle the turbinado sugar evenly over the top of the cobbler for a delightful crunch.
- Bake in the preheated oven for 35-40 minutes, or until the fruit is bubbly and the cobbler topping is golden brown.
- Once baked, remove the cobbler from the oven and allow it to cool for a few minutes before serving.
- Serve warm, ideally with a scoop of creamy vanilla ice cream to complement the sweet and tangy flavors.
