Ingredients
- Fresh corn on the cob (5 ears)
- Olive oil (1 tablespoon)
- Mayonnaise (1/4 cup)
- Cotija cheese, crumbled (1/2 cup)
- Fresh cilantro, chopped (1/4 cup)
- Lime, juiced (1 large)
- Chili powder (1 teaspoon)
- Garlic, minced (2 cloves)
- Salt (1/2 teaspoon, or to taste)
- Black pepper (1/4 teaspoon, or to taste)
Instructions
- Preheat your grill or grill pan over high heat. Lightly brush the corn with olive oil.
- Grill the corn for 10 to 12 minutes, turning occasionally, until it's charred on all sides. Let it cool.
- Once the corn is cool enough to handle, carefully cut the kernels off the cob.
- In a large bowl, combine the grilled corn kernels, mayonnaise, crumbled cotija cheese, chopped cilantro, lime juice, chili powder, minced garlic, salt, and pepper.
