Ingredients
- Cooked quinoa (1 cup)
- Fresh parsley (2 tablespoons, chopped)
- Red onion (1/4 cup, thinly sliced)
- Tomato (1/2 cup, diced)
- Cucumber (1/2 cup, diced)
- Lemon juice (1 tablespoon)
- Greek yogurt (1/2 cup)
- Salt and pepper (to taste)
- Ground paprika (1 teaspoon)
- Ground coriander (1 teaspoon)
- Ground cumin (1 teaspoon)
- Onion (1 medium, finely chopped)
- Garlic (3 cloves, minced)
- Olive oil (2 tablespoons)
- Ground lamb (1 pound)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and chopped onion, and sauté until fragrant and translucent.
- Add ground lamb to the skillet and cook until browned and cooked through.
- Season the lamb with ground cumin, ground coriander, ground paprika, salt, and pepper. Stir well to coat the meat with the spices.
- In a small bowl, mix Greek yogurt with lemon juice to make a sauce.
- In a serving bowl, layer cooked quinoa, seasoned lamb, diced cucumber, diced tomato, sliced red onion, and chopped fresh parsley.
- Drizzle the Greek yogurt sauce over the gyro bowl.
