Original recipe serves 10

Chocolate sandwich cookies
1 1/2 cups, crushed
Unsalted butter
1/4 cup, melted
Cream cheese
24 ounces, softened
Granulated sugar
1 cup
Instant coffee granules
2 tablespoons
Hot water
1/4 cup
Vanilla extract
1 teaspoon
Semi-sweet chocolate
8 ounces, melted
Whipped cream
for serving
Chocolate shavings
for garnish

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine the crushed chocolate sandwich cookies and melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan to create a solid crust.
  3. In a separate large bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy, ensuring there are no lumps.
  4. In a small bowl, dissolve the instant coffee granules in hot water, stirring until fully combined. Add this coffee mixture, the melted chocolate, and vanilla extract to the cream cheese mixture. Mix well until all ingredients are thoroughly incorporated.
  5. Pour the luscious filling over the prepared crust in the springform pan. Smooth the top with a spatula for an even finish.
  6. Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are slightly golden. The center may still have a slight jiggle, which is normal.
  7. Once baked, remove the cheesecake from the oven and let it cool to room temperature before refrigerating. Chill for at least 4 hours, preferably overnight, to allow it to set completely.
