- Instant coffee

- Chocolate cookies
- 2 cups, crushed
Instructions
- In a medium bowl, mix together the crushed chocolate cookies and melted butter until well combined. Press this mixture firmly into the base of a 9-inch pie dish to form the crust. Chill in the refrigerator while preparing the filling.
- Dissolve the instant coffee in hot water in a small bowl, stirring until fully dissolved. Let it cool.
- In a large bowl, beat together the softened cream cheese, powdered sugar, and peppermint extract until the mixture is smooth and creamy.
- Gradually add the cooled coffee mixture to the cream cheese mixture, continuing to beat until the ingredients are fully blended.
