Nectarine Chutney

- 1/2 teaspoon Cayenne pepper
- 1 teaspoon Cumin seeds
- 1 teaspoon Mustard seeds
- 1/2 cup Raisins
- 1 cup Brown sugar
- 1/2 cup Apple cider vinegar
- 2 cloves, minced Garlic
- 1 tablespoon, freshly grated Ginger
- 1 medium, finely chopped Red onion
- 6 medium, pitted and chopped Nectarines

Instructions
- In a large saucepan, combine the chopped nectarines, finely chopped red onion, freshly grated ginger, minced garlic, apple cider vinegar, brown sugar, raisins, mustard seeds, cumin seeds, cayenne pepper, and salt.
- Bring the mixture to a boil over medium heat, stirring occasionally to ensure the sugar dissolves completely.
- Once boiling, reduce the heat to low and let the mixture simmer for 20-25 minutes, or until the chutney has thickened to your preferred consistency. Stir occasionally to prevent sticking.
- Remove from heat and let the chutney cool completely. This also allows the flavors to develop further.
- Transfer the cooled chutney to a clean jar or container and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
- Serve your homemade nectarine chutney as a delightful condiment with grilled meats, a zesty spread for sandwiches, or a surprising topping for cheese and crackers. Enjoy!
Tips
- If you prefer a less spicy chutney, you can reduce the amount of cayenne pepper. You can also switch out the nectarines for peaches or plums, depending on what's seasonal.
