Rustic Onion and Garlic Roasted Potatoes

Ingredients
- Potatoes
- 2 lbs, washed and cubed
- Onion
- 1 large, finely chopped
- Garlic
- 4 cloves, minced
- Olive oil
- 3 tablespoons
- Salt
- 1 teaspoon or to taste
- Black pepper
- 1/2 teaspoon or to taste
- Paprika
- 1/2 teaspoon
- Dried thyme
- 1 teaspoon
Instructions
- Preheat your oven to 425°F (220°C).
- While the oven is preheating, in a large bowl, combine the cubed potatoes, finely chopped onion, minced garlic, olive oil, salt, black pepper, paprika, and dried thyme. Ensure all the potatoes are evenly coated with the mixture.
- Distribute the potato mixture in a single layer on a baking sheet, making sure none of the potatoes are overlapping. This will ensure they all get a nice, even roast.
- Place the baking sheet in the preheated oven and roast for 30-35 minutes. Halfway through, stir the potatoes to ensure they roast evenly and become golden brown and crispy.
- Once done, remove the baking sheet from the oven and allow the potatoes to cool for a few minutes before serving. This lets the flavors meld together beautifully.
Tips
- You can also use fresh thyme instead of dried, just remember to double the amount as fresh herbs are less potent than their dried counterparts.
- For a spicy kick, add a pinch of cayenne pepper to the mix.
- You can use any type of potatoes for this recipe, but Yukon Golds or Russets are particularly good for their crispy exterior and fluffy interior.
