Ingredients

  • Dried thyme (1/2 teaspoon)
  • Paprika (1/2 teaspoon)
  • Black pepper (1/2 teaspoon)
  • Salt (1 teaspoon)
  • Olive oil (3 tablespoons)
  • Garlic (4 cloves, minced)
  • Onion (1 large, thinly sliced)
  • Potatoes (1.5 lbs, cut into small cubes)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the potatoes, onion, garlic, olive oil, salt, black pepper, paprika, and dried thyme. Toss until the potatoes are evenly coated.
  3. Spread the potato mixture in a single layer on a baking sheet.
  4. Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy, stirring once halfway through.
  5. Remove from the oven and let cool for a few minutes before serving.
