Servings: 4

Ingredients

  • Potatoes (2 lbs, washed and cubed)
  • Onion (1 large, finely chopped)
  • Garlic (4 cloves, minced)
  • Olive oil (3 tablespoons)
  • Salt (1 teaspoon or to taste)
  • Black pepper (1/2 teaspoon or to taste)
  • Paprika (1/2 teaspoon)
  • Dried thyme (1 teaspoon)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. While the oven is preheating, in a large bowl, combine the cubed potatoes, finely chopped onion, minced garlic, olive oil, salt, black pepper, paprika, and dried thyme. Ensure all the potatoes are evenly coated with the mixture.
  3. Distribute the potato mixture in a single layer on a baking sheet, making sure none of the potatoes are overlapping. This will ensure they all get a nice, even roast.
  4. Place the baking sheet in the preheated oven and roast for 30-35 minutes. Halfway through, stir the potatoes to ensure they roast evenly and become golden brown and crispy.
  5. Once done, remove the baking sheet from the oven and allow the potatoes to cool for a few minutes before serving. This lets the flavors meld together beautifully.
