Ingredients

Original recipe serves 4

Oil
2 tablespoons (for cooking)
Salt
to taste
Turmeric powder
1/2 teaspoon
Cumin seeds
1 teaspoon
Mustard seeds
1 teaspoon
Curry leaves
10-12 leaves
Ginger
1 inch, grated
Green chili
1, finely chopped
Onion
1 large, finely chopped
Dosa batter
2 cups
Coconut chutney
for serving
Sambar
for serving

Instructions

  1. In a skillet or pan, heat 2 tablespoons of oil over medium heat.
  2. Add 1 teaspoon of mustard seeds and let them splutter. Once they start to pop, add 1 teaspoon of cumin seeds and 10-12 curry leaves.
  3. Next, add 1 large finely chopped onion, 1 chopped green chili, and 1 inch of grated ginger. Sauté until the onions turn golden brown and aromatic.
  4. Sprinkle in 1/2 teaspoon of turmeric powder and salt to taste. Mix everything well and cook for an additional 2-3 minutes. Remove from heat and set aside.
  5. To prepare the dosa, heat a non-stick dosa tawa or frying pan over medium-high heat. Pour a ladleful of dosa batter onto the tawa and spread it in a circular motion to form a thin crepe.
  6. Drizzle some oil around the edges of the dosa and cook until the bottom is golden brown, about 2-3 minutes.
  7. Once cooked, place a spoonful of the prepared onion masala on one half of the dosa and fold it over.
  8. Serve hot with coconut chutney and sambar on the side.
