Serves 4

Ingredients

Salt
to taste
Black pepper
to taste
Green onions
2, finely chopped
Garlic
2 cloves, minced
Vegetable oil
2 tablespoons
Sesame oil
1 teaspoon
Soy sauce
2 tablespoons
Eggs
2, beaten
Frozen peas
1 cup
Cooked jasmine rice
3 cups

Instructions

  1. In a small bowl, season the beaten eggs with a pinch of salt and pepper.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
  3. Add the seasoned eggs to the skillet and scramble until fully cooked. Once done, remove from the skillet and set aside.
  4. In the same skillet, add the remaining vegetable oil and heat over medium-high heat.
  5. Add the minced garlic and chopped green onions to the skillet and sauté for about 1-2 minutes until they release their aroma.
  6. Next, add the frozen peas to the skillet and cook for another 2-3 minutes, until they are heated through.
  7. Add the cooked jasmine rice to the skillet and stir-fry for 3-4 minutes, making sure to break up any clumps of rice.
  8. Drizzle the soy sauce and sesame oil over the rice mixture in the skillet and stir to combine everything together.
  9. Return the scrambled eggs to the skillet and toss everything together until well mixed.
  10. Season the fried rice with additional salt and pepper to taste.
  11. Serve your pea and egg fried rice hot, garnished with a sprinkle of sesame seeds or additional green onions, if desired.

Tips

  • 💡 For a non-vegetarian version, you can add cooked, diced chicken, shrimp, or pork.
  • 💡 Leftover rice works best for fried rice as it is drier and less likely to clump together.
  • 💡 For a spicier kick, add some red pepper flakes or a dash of sriracha.
