
Garlic and Zucchini Fried Rice
This flavorful garlic and zucchini fried rice is a delicious and healthy twist on traditional fried rice.
Ingredients
- Vegetable oil (2 tablespoons)
- Salt and pepper (to taste)
- Green onions (4, sliced)
- Eggs (2, beaten)
- Sesame oil (1 tablespoon)
- Soy sauce (3 tablespoons)
- Garlic (4 cloves, minced)
- Zucchini (2 medium, diced)
- Cooked rice (4 cups, chilled)
Instructions
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add minced garlic and diced zucchini to the skillet and cook until zucchini is tender, about 5 minutes.
- Push the zucchini to one side of the skillet and pour beaten eggs into the other side. Scramble the eggs until cooked through.
- Add chilled cooked rice to the skillet and stir to combine with the zucchini and eggs.
- Drizzle soy sauce and sesame oil over the rice mixture. Stir well to evenly coat the rice.
- Season with salt and pepper to taste.
- Continue cooking for another 5 minutes, stirring occasionally, until the rice is heated through.
- Remove from heat and garnish with sliced green onions.
- Serve hot and enjoy!
