Enhanced Fried Rice with Scrambled Eggs and Vegetables

Instructions
- In a small bowl, whisk the eggs with a pinch of salt and pepper until well combined.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
- Pour the whisked eggs into the skillet and scramble them until fully cooked, about 2-3 minutes. Remove the eggs from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil.
- Add the minced garlic and grated ginger, and cook for 1 minute until fragrant, stirring frequently.
- Add the diced carrots and sauté for 3-4 minutes until they begin to soften.
- Stir in the peas and chopped green onions, cooking for an additional 2 minutes.
- Push the vegetables to one side of the skillet and add the cold cooked rice to the other side. Break up any clumps of rice with a spatula.
- Drizzle the soy sauce and sesame oil over the rice and mix everything together, stir-frying for 3-4 minutes until well combined and heated through.
- Add the scrambled eggs back into the skillet and toss everything together gently, ensuring the eggs are evenly distributed.
