Green onions

Cooked rice
4 cups, for serving

Cornstarch
1 tablespoon
Fresh ginger
1 tablespoon, minced
Sesame oil
2 tablespoons
Soy sauce
1/4 cup
Garlic
3 cloves, minced
Onion
1 medium, sliced
Bell peppers
2, sliced (red and yellow for color)
Fresh pineapple
2 cups, cubed

Instructions

  1. In a small bowl, whisk together soy sauce, sesame oil, minced ginger, cornstarch, water, salt, and pepper until smooth. Set aside.
  2. Heat a large skillet or wok over medium-high heat. Add the sliced onion and minced garlic, and stir fry for about 2 minutes until fragrant and slightly translucent.
  3. Add the sliced bell peppers to the skillet and stir fry for another 3-4 minutes until they start to soften but still retain some crunch.
  4. Stir in the cubed pineapple and cook for an additional 2 minutes, allowing the sweetness of the pineapple to caramelize slightly.
  5. Pour the sauce mixture over the stir fry, stirring well to coat all ingredients. Cook for 1-2 minutes until the sauce thickens and clings to the vegetables and pineapple.
  6. Remove from heat and serve the stir fry over a bed of warm cooked rice.
