
Pineapple and Bell Pepper Stir Fry
This delicious stir fry combines the sweetness of pineapple with the crunch of bell peppers for a flavorful and colorful dish.
Ingredients
- Green onions (2, sliced (for garnish))
- Cooked rice (4 cups)
- Salt and pepper (to taste)
- Water (1/4 cup)
- Cornstarch (1 tablespoon)
- Ginger (1 teaspoon, grated)
- Sesame oil (1 tablespoon)
- Soy sauce (2 tablespoons)
- Garlic (2 cloves, minced)
- Onion (1, sliced)
- Bell peppers (2, sliced)
- Pineapple (1 cup, cubed)
Instructions
- In a small bowl, whisk together soy sauce, sesame oil, ginger, cornstarch, water, salt, and pepper. Set aside.
- Heat a large skillet or wok over medium-high heat. Add the sliced onion and minced garlic, and stir fry for 2 minutes until fragrant.
- Add the sliced bell peppers to the skillet and stir fry for another 3-4 minutes until they start to soften.
- Add the cubed pineapple to the skillet and stir fry for an additional 2 minutes.
- Pour the sauce mixture over the stir fry and cook for 1-2 minutes until the sauce thickens and coats the ingredients.
- Remove from heat and serve the stir fry over cooked rice.
- Garnish with sliced green onions and enjoy!
