Instructions
- In a small bowl, whisk together the soy sauce, honey, sesame oil, cornstarch, water, minced garlic, and minced ginger to create a smooth sauce. Set aside.
- Heat a large skillet or wok over medium-high heat. Add the shrimp and season with salt and pepper. Cook until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and onion. Stir fry for 2-3 minutes until they start to soften and become fragrant.
- Add the diced pineapple to the skillet and continue to cook for another 2 minutes, allowing the pineapple to caramelize slightly.
- Pour the prepared sauce over the vegetables and pineapple in the skillet. Cook for 1-2 minutes until the sauce thickens and coats the ingredients evenly.
- Return the cooked shrimp to the skillet, tossing to coat everything in the sauce. Cook for an additional 1-2 minutes to heat through.
- Serve the pineapple shrimp stir fry over a bed of cooked rice.
- Garnish with sliced green onions and a sprinkle of sesame seeds for added flavor and presentation.
Tips
- For added heat, consider adding a teaspoon of red pepper flakes or a splash of Sriracha to the sauce.
- If you're looking for a vegetarian option, substitute the shrimp with tofu or tempeh.
- Feel free to add other vegetables like broccoli, snap peas, or carrots to enhance the stir fry.
