
Pineapple Shrimp Stir Fry
This delicious pineapple shrimp stir fry is a perfect combination of sweet and savory flavors.
Ingredients
- Sesame seeds (1 tablespoon, for garnish)
- Green onions (2, sliced, for garnish)
- Cooked rice (4 cups, for serving)
- Salt and pepper (to taste)
- Water (1/4 cup)
- Cornstarch (1 tablespoon)
- Sesame oil (1 tablespoon)
- Honey (2 tablespoons)
- Soy sauce (3 tablespoons)
- Ginger (1 tablespoon, grated)
- Garlic (3 cloves, minced)
- Onion (1, sliced)
- Bell peppers (2, sliced)
- Pineapple (2 cups, diced)
- Shrimp (1 lb, peeled and deveined)
Instructions
- In a small bowl, whisk together soy sauce, honey, sesame oil, cornstarch, water, garlic, and ginger to make the sauce.
- Heat a large skillet or wok over medium-high heat. Add the shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and onion. Stir fry for 2-3 minutes until slightly softened.
- Add the diced pineapple to the skillet and cook for another 2 minutes.
- Pour the sauce over the vegetables and pineapple in the skillet. Cook for 1-2 minutes until the sauce thickens.
- Add the cooked shrimp back to the skillet and toss to coat everything in the sauce. Cook for an additional 1-2 minutes to heat through.
- Serve the pineapple shrimp stir fry over cooked rice.
- Garnish with sliced green onions and sesame seeds before serving.
