Shrimp
1 pound, peeled and deveined
Pineapple
1 cup, diced (fresh or canned)
Bell peppers
1 cup, sliced (any color)
Onion
1 medium, sliced
Garlic
3 cloves, minced
Ginger
1 tablespoon, minced
Soy sauce
3 tablespoons
Honey
2 tablespoons
Sesame oil
2 tablespoons
Cornstarch
1 tablespoon
Water
2 tablespoons
Salt
to taste
Pepper
to taste
Sesame seeds
for garnish
Green onions
for garnish, sliced
Cooked rice
for serving

Instructions

  1. In a small bowl, whisk together the soy sauce, honey, sesame oil, cornstarch, water, minced garlic, and minced ginger to create a smooth sauce. Set aside.
  2. Heat a large skillet or wok over medium-high heat. Add the shrimp and season with salt and pepper. Cook until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the sliced bell peppers and onion. Stir fry for 2-3 minutes until they start to soften and become fragrant.
  4. Add the diced pineapple to the skillet and continue to cook for another 2 minutes, allowing the pineapple to caramelize slightly.
  5. Pour the prepared sauce over the vegetables and pineapple in the skillet. Cook for 1-2 minutes until the sauce thickens and coats the ingredients evenly.
  6. Return the cooked shrimp to the skillet, tossing to coat everything in the sauce. Cook for an additional 1-2 minutes to heat through.
  7. Serve the pineapple shrimp stir fry over a bed of cooked rice.
  8. Garnish with sliced green onions and a sprinkle of sesame seeds for added flavor and presentation.
