Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts evenly with cumin, chili powder, salt, and pepper on both sides.
- Place the seasoned chicken breasts on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until the chicken is fully cooked and no longer pink inside. Remove from the oven and let cool for a few minutes before shredding the chicken with two forks.
- In a small saucepan over medium heat, warm the pinto beans until heated through, about 3-5 minutes. If using canned beans, drain and rinse before heating.
- While the beans are warming, prepare the salsa by combining the diced tomato, red onion, chopped cilantro, and lime juice in a bowl. Mix well and season with salt to taste.
- To assemble the tostadas, spread a generous layer of warm pinto beans on each tostada shell.
