1/2 teaspoon
Olive oil
2 tablespoons
Sweet potatoes
2 large, peeled and cubed
Unsalted butter
2 tablespoons
Milk
1/4 cup
Garlic powder
1/2 teaspoon
Dried thyme
1 teaspoon
Honey
3 tablespoons
Dijon mustard
2 tablespoons
Chicken broth
1/2 cup

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the pork tenderloin generously with salt and black pepper on all sides.
  3. In an oven-safe skillet, heat the olive oil over medium-high heat until shimmering.
  4. Sear the pork tenderloin in the skillet for about 2 minutes on each side until it develops a golden-brown crust.
  5. Transfer the skillet to the preheated oven and roast the pork for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
  6. Meanwhile, in a large pot, bring water to a boil and add the cubed sweet potatoes. Cook until fork-tender, approximately 10-15 minutes.
  7. Drain the sweet potatoes and return them to the pot. Add the butter, milk, garlic powder, and dried thyme.
  8. Mash the sweet potatoes with a potato masher until smooth and creamy, adjusting the milk for desired consistency.
  9. In a small saucepan, combine the chicken broth, Dijon mustard, and honey over medium heat. Bring to a simmer and cook for about 5 minutes, stirring occasionally, until slightly thickened.
  10. Once the pork is done, remove it from the oven and let it rest for 5 minutes before slicing.
  11. Serve the sliced pork tenderloin alongside the creamy sweet potato mash and drizzle with the honey-Dijon sauce.
