Instructions
- Preheat the oven to 400°F (200°C).
- Season the pork tenderloin generously with salt and black pepper on all sides.
- In an oven-safe skillet, heat the olive oil over medium-high heat until shimmering.
- Sear the pork tenderloin in the skillet for about 2 minutes on each side until it develops a golden-brown crust.
- Transfer the skillet to the preheated oven and roast the pork for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
- Meanwhile, in a large pot, bring water to a boil and add the cubed sweet potatoes. Cook until fork-tender, approximately 10-15 minutes.
- Drain the sweet potatoes and return them to the pot. Add the butter, milk, garlic powder, and dried thyme.
- Mash the sweet potatoes with a potato masher until smooth and creamy, adjusting the milk for desired consistency.
