Servings: 4

Ingredients

Portobello mushrooms
4 large caps
Balsamic vinegar
1/4 cup
Olive oil
2 tablespoons
Garlic
2 cloves, minced
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Burger buns
4, whole grain preferred
Mayonnaise
4 tablespoons
Dijon mustard
2 tablespoons
Avocado
1, sliced
Tomato
1, sliced
Red onion
1/2, thinly sliced
Lettuce
4 leaves, romaine or butter lettuce

Instructions

  1. In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, salt, and pepper to create a flavorful marinade.
  2. Remove the stems from the portobello mushrooms and thoroughly brush both sides with the marinade. Allow the mushrooms to marinate for at least 10 minutes to absorb the flavors.
  3. Preheat the grill or grill pan over medium heat. Ensure it's well-oiled to prevent sticking.
  4. Grill the marinated mushrooms for about 5 minutes per side, or until they are tender and juicy, creating beautiful grill marks.
  5. While the mushrooms are grilling, toast the burger buns on the grill for 1-2 minutes until they are golden and crisp.
  6. Spread 1 tablespoon of mayonnaise and 1/2 tablespoon of Dijon mustard on the bottom half of each bun.
  7. Place a grilled portobello mushroom on each bun, then layer with lettuce, tomato, red onion, and avocado slices for a fresh crunch.
  8. Top with the other half of the bun, press gently, and serve immediately while warm.
