Servings: 4

Ingredients

  • Portobello mushrooms (4 large, stems removed)
  • Olive oil (2 tablespoons)
  • Balsamic vinegar (3 tablespoons)
  • Soy sauce (2 tablespoons)
  • Garlic (3 cloves, minced)
  • Hamburger buns (4, toasted)
  • Mayonnaise (4 tablespoons)
  • Mustard (2 tablespoons)
  • Avocado (1, sliced)
  • Red onion (1 small, thinly sliced)
  • Tomato (1 large, sliced)
  • Lettuce (4 leaves, washed and dried)

Instructions

  1. In a small bowl, whisk together the balsamic vinegar, soy sauce, minced garlic, and olive oil to create a flavorful marinade.
  2. Remove the stems from the portobello mushrooms and place them in a shallow dish. Pour the marinade over the mushrooms, ensuring they are well coated. Cover and let them marinate for at least 30 minutes, allowing the flavors to penetrate.
  3. Preheat your grill to medium-high heat for optimal cooking.
  4. Carefully place the marinated portobello mushrooms on the grill. Grill for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
  5. While the mushrooms are grilling, toast the hamburger buns on the grill for a few minutes until they are lightly golden.
  6. To assemble the burgers, spread 1 tablespoon of mayonnaise and 1/2 tablespoon of mustard on the bottom half of each toasted bun. Place a grilled portobello mushroom on top, followed by a layer of lettuce, tomato slices, red onion, and avocado slices. Finally, place the top half of the bun on the burger to complete your masterpiece.
  7. Serve the grilled portobello burgers immediately with your favorite side dish, such as sweet potato fries or a fresh salad.
