Ingredients

Olive oil
2 tablespoons
Salt
to taste
Black pepper
to taste
Paprika
1 teaspoon
Cumin
1 teaspoon
Garlic
2 cloves, minced
Onion
1 medium, sliced
Green bell pepper
1, sliced
Red bell pepper
1, sliced
Cheddar cheese
2 cups, shredded
Flour tortillas
4 (10-inch) tortillas
Prawns
1 pound, peeled and deveined
Salsa
1 cup (for serving)
Sour cream
1 cup (for serving)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced onion, green bell pepper, red bell pepper, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.
  3. Stir in the prawns, cumin, paprika, salt, and pepper. Cook until the prawns turn pink and are fully cooked through, about 3-4 minutes. Remove the prawn mixture from the skillet and set aside.
  4. In the same skillet, place a tortilla and sprinkle half of it with 1/2 cup of shredded cheddar cheese.
  5. Add a portion of the prawn mixture on top of the cheese, then fold the tortilla over to create a half-moon shape, pressing down gently.
  6. Cook for 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted. Repeat with the remaining tortillas and prawn mixture.
  7. Cut the quesadillas into wedges and serve hot with sour cream and salsa on the side.
