
Prawn Quesadillas
These delicious prawn quesadillas are filled with juicy prawns, melted cheese, and flavorful spices.
Ingredients
- Salsa (for serving)
- Sour cream (for serving)
- Olive oil (2 tablespoons)
- Salt and pepper (to taste)
- Paprika (1 teaspoon)
- Cumin (1 teaspoon)
- Garlic (2 cloves, minced)
- Onion (1, thinly sliced)
- Green bell pepper (1, thinly sliced)
- Red bell pepper (1, thinly sliced)
- Cheddar cheese (1 cup, shredded)
- Flour tortillas (8)
- Prawns (1 pound, peeled and deveined)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the sliced onion, bell peppers, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the prawns, cumin, paprika, salt, and pepper to the skillet. Cook until the prawns are pink and cooked through, about 3-4 minutes.
- Remove the prawn mixture from the skillet and set aside.
- Place a tortilla in the skillet and sprinkle with shredded cheddar cheese.
- Add a portion of the prawn mixture on top of the cheese.
- Top with another tortilla and press down gently.
- Cook for 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted.
- Repeat with the remaining tortillas and prawn mixture.
- Cut the quesadillas into wedges and serve hot with sour cream and salsa.
