Prawn Quesadillas

Ingredients
- Olive oil
- 2 tablespoons
- Salt

- Black pepper

- Paprika
- 1 teaspoon
- Cumin
- 1 teaspoon
- Garlic
- 2 cloves, minced
- Onion
- 1 medium, sliced
- Green bell pepper
- 1, sliced
- Red bell pepper
- 1, sliced
- Cheddar cheese
- 2 cups, shredded
- Flour tortillas
- 4 (10-inch) tortillas
- Prawns
- 1 pound, peeled and deveined
- Salsa
- 1 cup (for serving)
- Sour cream
- 1 cup (for serving)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced onion, green bell pepper, red bell pepper, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.
- Stir in the prawns, cumin, paprika, salt, and pepper. Cook until the prawns turn pink and are fully cooked through, about 3-4 minutes. Remove the prawn mixture from the skillet and set aside.
- In the same skillet, place a tortilla and sprinkle half of it with 1/2 cup of shredded cheddar cheese.
- Add a portion of the prawn mixture on top of the cheese, then fold the tortilla over to create a half-moon shape, pressing down gently.
- Cook for 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted. Repeat with the remaining tortillas and prawn mixture.
- Cut the quesadillas into wedges and serve hot with sour cream and salsa on the side.
