Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced onion, green bell pepper, red bell pepper, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.
- Stir in the prawns, cumin, paprika, salt, and pepper. Cook until the prawns turn pink and are fully cooked through, about 3-4 minutes. Remove the prawn mixture from the skillet and set aside.
- In the same skillet, place a tortilla and sprinkle half of it with 1/2 cup of shredded cheddar cheese.
- Add a portion of the prawn mixture on top of the cheese, then fold the tortilla over to create a half-moon shape, pressing down gently.
- Cook for 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted. Repeat with the remaining tortillas and prawn mixture.
- Cut the quesadillas into wedges and serve hot with sour cream and salsa on the side.
Tips
- For added heat, consider adding sliced jalapeños or a dash of hot sauce to the prawn mixture.
- Feel free to experiment with different cheeses, such as Monterey Jack or pepper jack, for a unique twist.
- You can also add black beans or corn for extra texture and flavor.
