
Prawn Fajitas
These delicious prawn fajitas are packed with flavor and perfect for a quick and easy weeknight dinner.
Ingredients
- Fresh cilantro (for garnish)
- Guacamole (1/2 cup)
- Salsa (1/2 cup)
- Sour cream (1/2 cup)
- Tortillas (8, warmed)
- Salt and pepper (to taste)
- Paprika (1/2 teaspoon)
- Cumin (1 teaspoon)
- Chili powder (1 teaspoon)
- Olive oil (2 tablespoons)
- Lime (1, juiced)
- Garlic (3 cloves, minced)
- Onion (1, thinly sliced)
- Bell peppers (2, thinly sliced)
- Prawns (1 pound, peeled and deveined)
Instructions
- In a bowl, combine the prawns, bell peppers, onion, garlic, lime juice, olive oil, chili powder, cumin, paprika, salt, and pepper. Mix well to coat the prawns and vegetables.
- Heat a large skillet over medium-high heat. Add the prawn mixture and cook for 5-6 minutes, or until the prawns are cooked through and the vegetables are tender.
- Warm the tortillas in a separate skillet or in the oven.
- Serve the prawn mixture on the warm tortillas and top with sour cream, salsa, guacamole, and fresh cilantro.
- Fold the tortillas over the filling and enjoy!
