Ingredients
- Large mushrooms
- 12, stems removed
- Prawns
- 8 ounces, peeled and deveined
- Olive oil
- 2 tablespoons
- Onion
- 1 small, finely chopped
- Garlic
- 2 cloves, minced
- Breadcrumbs
- 1/2 cup
- Parmesan cheese
- 1/3 cup, grated
- Fresh parsley
- 2 tablespoons, chopped
- Salt

Instructions
- Preheat the oven to 375°F (190°C).
- Remove the stems from the mushrooms and set them aside. Place the mushroom caps, open side up, on a baking sheet.
- Finely chop the mushroom stems and set them aside.
- In a pan over medium heat, add the olive oil. Once hot, add the minced garlic and chopped onion, sautéing until softened and fragrant, about 3-4 minutes.
- Add the chopped mushroom stems and prawns to the pan. Cook, stirring frequently, until the prawns turn pink and are cooked through, about 5-6 minutes.
- Remove the pan from heat and let the mixture cool slightly before transferring it to a mixing bowl.
- To the bowl, add breadcrumbs, grated Parmesan cheese, chopped parsley, salt, and pepper. Mix thoroughly until well combined.
- Generously spoon the prawn mixture into the mushroom caps, packing them slightly.
- Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
