Ingredients

Large mushrooms
12, stems removed
Prawns
8 ounces, peeled and deveined
Olive oil
2 tablespoons
Onion
1 small, finely chopped
Garlic
2 cloves, minced
Breadcrumbs
1/2 cup
Parmesan cheese
1/3 cup, grated
Fresh parsley
2 tablespoons, chopped
Salt
to taste
Black pepper
to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Remove the stems from the mushrooms and set them aside. Place the mushroom caps, open side up, on a baking sheet.
  3. Finely chop the mushroom stems and set them aside.
  4. In a pan over medium heat, add the olive oil. Once hot, add the minced garlic and chopped onion, sautéing until softened and fragrant, about 3-4 minutes.
  5. Add the chopped mushroom stems and prawns to the pan. Cook, stirring frequently, until the prawns turn pink and are cooked through, about 5-6 minutes.
  6. Remove the pan from heat and let the mixture cool slightly before transferring it to a mixing bowl.
  7. To the bowl, add breadcrumbs, grated Parmesan cheese, chopped parsley, salt, and pepper. Mix thoroughly until well combined.
  8. Generously spoon the prawn mixture into the mushroom caps, packing them slightly.
  9. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
  10. Serve hot, garnished with additional parsley if desired, and enjoy these delectable bites!
