Ingredients
- Razor clams
- 1 pound, cleaned and chopped
- All-purpose flour
- 1 cup
- Baking powder
- 1 tablespoon
- Milk
- 1/2 cup
- Eggs
- 2, beaten
- Garlic
- 2 cloves, minced
- Green onions
- 1/4 cup, finely chopped
- Salt
- 1 teaspoon
- Black pepper
- 1/2 teaspoon
- Vegetable oil
- for frying
Instructions
- In a large mixing bowl, combine the chopped razor clams, beaten eggs, all-purpose flour, baking powder, milk, minced garlic, chopped green onions, salt, and black pepper. Stir until the mixture is well combined and forms a thick batter.
- Heat vegetable oil in a large skillet over medium-high heat. You want enough oil to cover the bottom of the skillet but not so much that it overflows when you add the fritters.
- Once the oil is hot, drop spoonfuls of the clam mixture into the skillet, flattening them slightly with the back of a spoon to form fritters. Be careful not to overcrowd the skillet; you may need to work in batches.
- Fry the fritters for about 2-3 minutes on each side, or until they are golden brown and crispy. Use a slotted spoon to remove them from the skillet, and drain on paper towels.
- Serve hot with a zesty dipping sauce or tartar sauce.

- For a spicier kick, add a pinch of cayenne pepper to the batter.
