Ingredients

Zucchini
2 medium-sized, grated
Egg
1, beaten
All-purpose flour
1/2 cup
Parmesan cheese
1/2 cup, grated
Green onions
2, finely chopped
Garlic powder
1/2 teaspoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Vegetable oil
enough for frying

Instructions

  1. Place the grated zucchini in a colander over a bowl, sprinkle with salt and let it sit for 10 minutes. This process will help draw out the excess moisture from the zucchini.
  2. After 10 minutes, squeeze the zucchini to remove as much liquid as possible. Be sure to squeeze firmly but gently to avoid crushing the zucchini. Transfer to a large bowl.
  3. To the same bowl, add beaten egg, all-purpose flour, grated Parmesan cheese, finely chopped green onions, garlic powder, salt, and black pepper. Mix everything well to combine and ensure the zucchini is evenly coated.
  4. Heat vegetable oil in a large skillet over medium heat. Ensure there is enough oil to cover the bottom of the skillet.
  5. Using a 1/4 cup measure, scoop out the zucchini mixture and gently flatten it into a patty shape. Repeat this process with the remaining mixture.
  6. Place the patties in the hot oil and fry for 3-4 minutes per side, or until they turn a beautiful golden brown and become crispy.
  7. Once done, transfer the cooked fritters to a paper towel-lined plate to drain excess oil.
  8. Serve these delightful zucchini fritters warm, with your favorite dipping sauce. They pair well with a cool, creamy tzatziki or a spicy sriracha mayo.
