Crispy Parmesan Zucchini Fritters

Ingredients
- 2 medium-sized, grated Zucchini
- 1, beaten Egg
- 1/2 cup All-purpose flour
- 1/2 cup, grated Parmesan cheese
- 2, finely chopped Green onions
- 1/2 teaspoon Garlic powder
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- Enough for frying Vegetable oil

Instructions
- Place the grated zucchini in a colander over a bowl, sprinkle with salt and let it sit for 10 minutes. This process will help draw out the excess moisture from the zucchini.
- After 10 minutes, squeeze the zucchini to remove as much liquid as possible. Be sure to squeeze firmly but gently to avoid crushing the zucchini. Transfer to a large bowl.
- To the same bowl, add beaten egg, all-purpose flour, grated Parmesan cheese, finely chopped green onions, garlic powder, salt, and black pepper. Mix everything well to combine and ensure the zucchini is evenly coated.
- Heat vegetable oil in a large skillet over medium heat. Ensure there is enough oil to cover the bottom of the skillet.
- Using a 1/4 cup measure, scoop out the zucchini mixture and gently flatten it into a patty shape. Repeat this process with the remaining mixture.
- Place the patties in the hot oil and fry for 3-4 minutes per side, or until they turn a beautiful golden brown and become crispy.
- Once done, transfer the cooked fritters to a paper towel-lined plate to drain excess oil.
