2 tablespoons
Shallots
2, finely chopped
Garlic
2 cloves, minced
All-purpose flour
1 tablespoon
Red wine
1 cup (preferably a dry red wine)
Beef or vegetable broth
1 cup
Fresh thyme
2 sprigs
Salt
to taste
Black pepper
to taste

Instructions

  1. In a saucepan, melt the unsalted butter over medium heat until it begins to foam.
  2. Add the finely chopped shallots and minced garlic to the pan, cooking until softened and fragrant, about 2 minutes.
  3. Sprinkle the all-purpose flour over the shallots and garlic, stirring constantly for an additional 1 minute to create a roux.
  4. Slowly pour in the red wine, continuing to stir to prevent lumps from forming. Allow the mixture to come to a gentle boil.
  5. Add the beef or vegetable broth and the fresh thyme sprigs to the pan. Bring the sauce to a simmer.
  6. Reduce the heat to low and let the sauce simmer for about 15 minutes, stirring occasionally, or until it thickens to your desired consistency.
  7. Remove the thyme sprigs and season the sauce with salt and black pepper to taste.
