Roasted Garlic and Red Pepper Linguine

A delicious pasta dish featuring the bold flavors of roasted garlic and red pepper.

Ingredients

  • Fresh basil (1/4 cup, chopped)
  • Parmesan cheese (1/2 cup, grated)
  • Salt and pepper (to taste)
  • Crushed red pepper flakes (1/2 teaspoon)
  • Red bell pepper (1, roasted and sliced)
  • Garlic (6 cloves, roasted and minced)
  • Olive oil (2 tablespoons)
  • Linguine (1 pound)

Instructions

  1. Preheat the oven to 400°F. Place the garlic and red bell pepper on a baking sheet, drizzle with olive oil, and roast for 20 minutes.
  2. While the garlic and pepper are roasting, cook the linguine according to the package instructions.
  3. In a large skillet, heat the olive oil over medium heat. Add the roasted garlic and red pepper, crushed red pepper flakes, salt, and pepper. Cook for 2-3 minutes.
  4. Drain the linguine, reserving 1 cup of the pasta water. Add the linguine to the skillet and toss to combine.
  5. If the pasta seems dry, add some of the reserved pasta water.
  6. Serve the pasta with a sprinkle of grated Parmesan cheese and a garnish of fresh basil.
