
Rosemary and Goat Cheese Mac and Cheese
A creamy, tangy mac and cheese with the aromatic flavor of rosemary.
Ingredients
- Salt and pepper (to taste)
- Rosemary (1 tablespoon, finely chopped)
- Cheddar cheese (1 cup, shredded)
- Goat cheese (1 cup, crumbled)
- Milk (2 cups)
- All (purpose flour - 2 tablespoons)
- Butter (2 tablespoons)
- Macaroni (2 cups)
Instructions
- Cook the macaroni according to the package instructions. Drain and set aside.
- In a large saucepan, melt the butter over medium heat. Stir in the flour to make a roux.
- Gradually whisk in the milk. Bring to a simmer, stirring constantly, until the sauce thickens.
- Remove the saucepan from the heat. Stir in the goat cheese, cheddar cheese, and rosemary until the cheese is melted and the sauce is smooth.
- Season with salt and pepper to taste.
- Add the cooked macaroni to the sauce and stir until well coated.
- Serve the mac and cheese hot, garnished with extra rosemary if desired.
