Saag Paneer

- 4 cups, washed and chopped Spinach
- 1 cup, cubed Paneer cheese

Instructions
- In a large pan, heat the oil over medium heat. Once hot, add the cumin seeds and let them splutter, releasing their fragrant aroma.
- Add the chopped onions, garlic, and ginger to the pan. Sauté until the onions turn golden brown, stirring occasionally to prevent burning.
- Stir in the chopped tomato and slit green chili. Cook until the tomatoes soften and begin to break down.
- Sprinkle in the turmeric powder, coriander powder, and salt. Mix well, allowing the spices to coat the mixture.
- Add the chopped spinach and cook until wilted, about 3-4 minutes. Stir occasionally to ensure even cooking.
- Remove the pan from heat and transfer the spinach mixture to a blender. Blend until smooth, adding a little water if necessary to achieve a creamy consistency.
- Return the blended mixture to the pan and add the cubed paneer cheese. Cook for an additional 5 minutes, stirring occasionally to let the paneer absorb the flavors.
- Sprinkle the garam masala over the top and mix well. Adjust the seasoning if needed.
- Garnish with fresh cilantro before serving.
- Serve hot with steamed rice or warm naan bread for a complete meal.
