Salmon Tacos

These delicious salmon tacos are made with grilled salmon, fresh vegetables, and a tangy lime crema.

Ingredients

  • Salt and pepper (to taste)
  • Sour cream (1/2 cup)
  • Lime (1, juiced)
  • Cilantro (1/4 cup, chopped)
  • Red onion (1/2, thinly sliced)
  • Tomato (1, diced)
  • Lettuce (1 cup, shredded)
  • Corn tortillas (8)
  • Olive oil (2 tablespoons)
  • Taco seasoning (2 tablespoons)
  • Salmon fillets (4)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the salmon fillets with taco seasoning, salt, and pepper.
  3. Drizzle olive oil over the salmon fillets and rub to coat.
  4. Grill the salmon for 4-5 minutes per side, or until cooked through.
  5. Remove the salmon from the grill and let it rest for a few minutes.
  6. Meanwhile, warm the corn tortillas on the grill or stovetop.
  7. In a small bowl, mix together the sour cream, lime juice, salt, and pepper to make the lime crema.
  8. Flake the grilled salmon into bite-sized pieces.
  9. To assemble the tacos, spread a spoonful of lime crema on each tortilla.
  10. Top with shredded lettuce, diced tomato, sliced red onion, cilantro, and flaked salmon.
  11. Serve the salmon tacos with extra lime wedges and enjoy!
