Instructions
- Soak the salted cod in cold water overnight to remove excess salt, changing the water a few times to ensure thorough desalination.
- In a large pot, bring fresh water to a boil. Carefully add the soaked cod and cook for about 20 minutes, or until the fish is tender and flakes easily.
- Once cooked, remove the fish from the pot and let it cool slightly. Flake the fish into small pieces, making sure to remove any bones or skin.
- In a separate pot, add the diced potatoes to boiling salted water. Cook until tender, about 15-20 minutes. Drain and set aside.
- In a frying pan, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Gently add the flaked fish and cooked potatoes to the frying pan. Stir carefully to combine, ensuring not to break the potatoes too much.
- Pour in the milk and cook for an additional few minutes until everything is heated through and creamy.
- Season to taste with black pepper and sprinkle with chopped parsley for a fresh finish.
- Serve hot, ideally with a side of crusty bread to soak up the delicious flavors.
Tips
- For a variation, you can add sautéed vegetables such as carrots or peas for added nutrition and color.
- If you prefer a richer sauce, consider adding a splash of cream or a dollop of sour cream at the end for extra creaminess.
