Santa Maria Tri Tip
Experience the rich flavors of California's Central Coast with this Santa Maria Tri Tip. This succulent cut of beef is seasoned with a zesty blend of spices and grilled to perfection, resulting in a mouthwatering roast that is crisp on the outside and juicy on the inside. Traditionally served with a side of fresh salsa and buttery garlic bread, this dish is perfect for gatherings, barbecues, or a cozy family dinner. The origins of Santa Maria Tri Tip date back to the 1950s, when it became a staple at local barbecue festivals, celebrating the robust flavors of the region.
Ingredients
- Olive oil
- 2 tablespoons
- Cayenne pepper
- 1 teaspoon
- Black pepper
- 1 teaspoon
- Salt
- 1 tablespoon
- Dried rosemary
- 1 teaspoon
- Onion powder
- 1 teaspoon
- Garlic powder
- 1 teaspoon
- Tri tip roast
- 2-3 pounds
- Fresh parsley
- for garnish
- Salsa (optional)
- 1 cup
- Garlic bread (optional)
- 1 loaf
Instructions
- Preheat your grill to high heat, ensuring the grates are clean.
- In a small bowl, combine garlic powder, onion powder, dried rosemary, salt, black pepper, and cayenne pepper to create a spice rub.
- Generously rub the spice mixture all over the tri tip roast, ensuring it's evenly coated.
- Drizzle the tri tip with olive oil, massaging it into the meat for added flavor and moisture.
- Place the roast on the hot grill and sear each side for about 5 minutes until well browned.
- Reduce the grill heat to medium and continue cooking the roast for an additional 20-30 minutes, turning occasionally, until it reaches your preferred level of doneness (135°F for medium-rare).
- Once done, remove the roast from the grill and let it rest for 10 minutes to allow the juices to redistribute.
- Slice against the grain and serve garnished with fresh parsley, alongside salsa and garlic bread, if desired.
Tips
- For a more intense flavor, marinate the tri tip in the spice rub and olive oil overnight in the refrigerator.
- Pair the tri tip with a side of classic Santa Maria-style beans and a green salad for a complete meal.
- Adjust the cayenne pepper to your desired spice level; feel free to omit it for a milder version.
