Classic Shrimp Scampi Pasta

Succulent, juicy shrimps are sautéed in a delectably rich garlic-butter sauce, spiked up with a dash of white wine and a spritz of fresh lemon, then served over a bed of perfectly al dente linguine. Ingredients
- Linguine pasta
- 8 ounces
- Butter
- 4 tablespoons
- Garlic
- 4 cloves, minced
- Red pepper flakes
- 1/4 teaspoon
- Shrimp
- 1 pound, peeled and deveined
- White wine
- 1/2 cup
- Lemon juice
- juice of half a lemon
- Salt and pepper
- to taste
- Fresh parsley
- 1/4 cup, chopped
- Parmesan cheese
- 1/4 cup, freshly grated
Instructions
- Cook the linguine pasta in a large pot of boiling salted water, following the package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, melt the butter. Add the minced garlic and red pepper flakes, then sauté until the garlic becomes fragrant, about 1-2 minutes.
- Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes on each side until they turn pink and are cooked through. Once cooked, remove the shrimp from the skillet and set them aside.
- Pour the white wine and lemon juice into the skillet, then bring the mixture to a simmer. Allow it to cook for 2-3 minutes to reduce slightly.
- Add the cooked linguine pasta to the skillet and toss well to ensure it's fully coated with the garlic-butter sauce.
- Return the cooked shrimp to the skillet and toss to combine with the pasta.
- Taste the pasta and adjust the seasoning with additional salt and pepper if necessary.
- Sprinkle over the chopped parsley and grated Parmesan cheese just before serving.
- Serve the Shrimp Scampi Pasta immediately, best enjoyed hot.
Tips
- To add a touch of green, consider adding a handful of spinach or arugula at the end. For a gluten-free version, use a GF pasta of your choice.
