Ingredients

Original recipe serves 4

Chicken wings
2 pounds, separated into flats and drumsticks
Unsalted butter
1/2 cup
Buffalo sauce
1 cup
Apple cider vinegar
2 tablespoons
Honey
1 tablespoon
Celery sticks
for serving
Blue cheese dressing
for serving
Smoked paprika
1 tablespoon
Garlic powder
1 teaspoon
Onion powder
1 teaspoon
Black pepper
1/2 teaspoon
Salt
1/2 teaspoon

Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. In a small bowl, combine the smoked paprika, garlic powder, onion powder, salt, and black pepper to create a seasoning blend.
  3. Pat the chicken wings dry using paper towels to ensure they crisp up nicely. Sprinkle the seasoning blend evenly over the wings, ensuring each wing is well-coated.
  4. Arrange the seasoned wings on the smoker grates, making sure they are spaced apart for even smoke circulation. Smoke the wings for 1 hour.
  5. While the wings are smoking, prepare the Buffalo sauce. In a saucepan over medium heat, melt the unsalted butter. Once melted, stir in the buffalo sauce, apple cider vinegar, and honey. Allow the mixture to simmer for 5 minutes, stirring occasionally to blend the flavors.
  6. After 1 hour of smoking, carefully remove the wings from the smoker. Increase the oven temperature to 375°F (190°C).
  7. Transfer the smoked wings to a baking sheet lined with parchment paper. Generously brush the wings with the prepared buffalo sauce.
  8. Bake the wings in the preheated oven for 20-25 minutes, or until they are crispy and cooked through. The internal temperature should reach 165°F (74°C).
  9. Serve the smoked buffalo wings hot, accompanied by cool blue cheese dressing and crunchy celery sticks for dipping.

Tips

  • 💡 For extra heat, add a few dashes of hot sauce to the buffalo sauce while it simmers.
  • 💡 Experiment with different types of wood chips for smoking, such as hickory or applewood, to enhance the flavor profile.
  • 💡 Feel free to toss the wings in the buffalo sauce after baking for an extra saucy finish.
