Smoked Steelhead Chowder

Ingredients
- 2 tablespoons, chopped Fresh parsley

- 1 cup Heavy cream
- 1 lb, flaked Smoked steelhead
- 4 cups Chicken broth
- 2 large, diced Potatoes
- 3 cloves, minced Garlic
- 1 large, chopped Onion
- 2 tablespoons Butter

Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic to the pot. Stir occasionally and cook until the onion becomes translucent, about 5 minutes.
- Pour in the diced potatoes and chicken broth into the pot. Increase the heat to bring the mixture to a boil.
- Once boiling, reduce the heat to low and allow it to simmer. Cook until the potatoes are tender, about 15 minutes.
- Stir in the flaked smoked steelhead and heavy cream. Continue to cook, stirring occasionally, until the chowder is heated through, about 5 minutes.
- Season the chowder with salt and pepper according to your preference.
- Ladle the hot chowder into bowls and garnish with chopped fresh parsley before serving.
