- Sole fillets

- All-purpose flour
- 1/2 cup
- Salt
- 1 teaspoon, divided
- Black pepper
- 1/2 teaspoon
- Unsalted butter
- 4 tablespoons
- Lemon
- 1, juiced and zested
- Fresh parsley
- 2 tablespoons, chopped
Instructions
- In a shallow dish, combine the all-purpose flour, 1/2 teaspoon of salt, and black pepper, mixing well.
- Dredge the sole fillets in the flour mixture, shaking off any excess flour to ensure a light coating.
- In a large skillet, melt 2 tablespoons of unsalted butter over medium-high heat until it begins to foam.
- Carefully add the sole fillets to the skillet and cook for 2-3 minutes on each side, or until they are golden brown and cooked through. Use a spatula to gently flip the fillets.
- Once cooked, remove the sole fillets from the skillet and transfer them to a warm serving plate.
- In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of unsalted butter. Allow it to melt and cook until it turns a light golden brown, giving off a nutty aroma.
