South African Bobotie Curry

- 2 slices, crusts removed Bread
- 1 tablespoon White vinegar
- 2 tablespoons Apricot jam
- 1 tablespoon, grated Fresh ginger
- 1 teaspoon Ground cinnamon
- 1 teaspoon Ground coriander
- 1 teaspoon Ground cumin
- 1/2 teaspoon Turmeric
- 1 tablespoon Curry powder
- 2 cloves, minced Garlic
- 1 medium, chopped Onion
- 500 grams (about 1 lb) Ground beef

Instructions
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula. Drain any excess fat from the pan.
- In a small bowl, combine the curry powder, turmeric, ground cumin, ground coriander, ground cinnamon, and grated ginger to create a spice mixture.
- Stir the spice mixture, apricot jam, and white vinegar into the beef mixture, ensuring everything is well combined.
- Soak the bread in the milk for a few minutes, then squeeze out the excess milk and crumble the bread into the pan. Mix thoroughly.
- Add the raisins and slivered almonds, seasoning the mixture with salt and pepper to taste.
- Transfer the meat mixture to a greased baking dish, spreading it evenly.
- In a separate bowl, whisk together the eggs and remaining milk until smooth. Pour this egg custard over the meat mixture in the baking dish.
- Bake in the preheated oven for 40-45 minutes, or until the custard is set and golden brown on top.
- Remove from the oven and allow it to cool for a few minutes before serving. Bobotie is best enjoyed warm, paired with steamed rice or traditional South African bread.
