Ingredients

  • Potatoes (4 medium, peeled and thinly sliced)
  • Onion (1 large, thinly sliced)
  • Eggs (6 large)
  • Olive oil (1/2 cup)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Heat half of the olive oil in a large non-stick frying pan over medium heat.
  2. Add the potatoes and onion to the pan. Cook, stirring occasionally, until the potatoes are tender and the onion is translucent, about 10-15 minutes. Be careful not to brown them.
  3. In a large bowl, beat the eggs with salt and pepper.
  4. Using a slotted spoon, transfer the cooked potatoes and onions to the egg mixture, keeping the oil in the pan. Stir gently to combine and let it sit for 10 minutes to soak up the egg.
  5. Heat the remainder of the olive oil in the pan over medium heat. Pour the egg, potato and onion mixture into the pan, spreading it out evenly.
  6. Cook the tortilla over medium heat until the bottom is golden brown and it's mostly set, about 5-7 minutes. Carefully flip the tortilla over using a large plate and cook on the other side until golden brown, about another 5 minutes.
  7. Slide the tortilla onto a plate and let it cool for a few minutes before serving. It can be enjoyed warm or at room temperature.
