
Spicy Prawn Soup
This spicy prawn soup is packed with flavors of fresh prawns, vegetables, and aromatic spices.
Ingredients
- Black pepper (to taste)
- Salt (to taste)
- Cilantro (1/4 cup, chopped)
- Vegetable broth (4 cups)
- Coconut milk (1 cup)
- Lime juice (2 tablespoons)
- Fish sauce (2 tablespoons)
- Bell pepper (1 medium, thinly sliced)
- Carrot (1 medium, thinly sliced)
- Tomato (1 large, chopped)
- Red chili flakes (1 teaspoon)
- Ginger (1-inch piece, grated)
- Garlic (3 cloves, minced)
- Onion (1 medium, finely chopped)
- Prawns (500 grams, peeled and deveined)
Instructions
- Heat oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion becomes translucent.
- Add the red chili flakes and sauté for another minute.
- Add the chopped tomato, sliced carrot, and bell pepper. Cook for 5 minutes, until the vegetables start to soften.
- Add the peeled and deveined prawns to the pot. Cook for 2-3 minutes until they turn pink.
- Pour in the vegetable broth and coconut milk. Stir well.
- Season with fish sauce, lime juice, salt, and black pepper. Adjust the seasoning according to taste.
- Simmer the soup for 10-15 minutes to allow the flavors to meld together.
- Garnish with chopped cilantro before serving.
- Serve hot and enjoy!
