Ingredients

Glutinous rice
1 cup
Coconut milk
1 cup
Water
1/2 cup
Sugar
1/4 cup
Salt
1/4 teaspoon
Vanilla extract
1 teaspoon
Dark chocolate
100g, chopped
Grated coconut
1/2 cup

Instructions

  1. Rinse the glutinous rice under cold water until the water runs clear. Drain well to remove excess starch.
  2. In a large pot, combine the rinsed glutinous rice, coconut milk, sugar, vanilla extract, salt, and water. Stir well to ensure the sugar is dissolved.
  3. Bring the mixture to a boil over medium heat, stirring occasionally to prevent sticking.
  4. Once boiling, reduce the heat to low, cover the pot, and simmer for 20 minutes or until the rice is tender and the liquid has been absorbed.
  5. Remove the pot from the heat and let it sit, covered, for an additional 10 minutes to allow the rice to steam and become even stickier.
  6. While the rice is resting, melt the dark chocolate in a heatproof bowl set over a pot of simmering water, stirring constantly until smooth and glossy.
  7. After the rice has rested, fluff it gently with a fork to separate the grains and transfer it to a serving dish.
  8. Drizzle the melted chocolate generously over the warm rice, then sprinkle with grated coconut for added texture and flavor.
