Suquet de Peix

- 3 tablespoons Olive oil
- 2, finely chopped Onions
- 4 cloves, minced Garlic
- 4, ripe, chopped Tomatoes
- 4 cups Fish stock
- 2, medium, peeled and diced Potatoes
- 1 pound (e.g., shrimp, mussels, and white fish) Mixed seafood
- 1/4 teaspoon Saffron

- 1/4 cup, chopped Fresh parsley

Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onions and minced garlic. Sauté until the onions become soft and golden, approximately 10 minutes.
- Stir in the chopped tomatoes and cook for an additional 5 minutes until the tomatoes break down.
- Pour in the fish stock, then add the diced potatoes, saffron, salt, and pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.
- Add the mixed seafood to the pot and cook for another 10 minutes, or until the seafood is cooked through and tender.
- Finally, stir in the chopped parsley and adjust seasoning if necessary. Serve hot with crusty bread.
