- Onions (2, finely chopped)
- Garlic (4 cloves, minced)
- Tomatoes (4, ripe, chopped)
- Fish stock (4 cups)
- Potatoes (2, medium, peeled and diced)
- Mixed seafood (1 pound (e.g., shrimp, mussels, and white fish))
- Saffron (1/4 teaspoon)
- Salt (to taste)
- Black pepper (to taste)
- Fresh parsley (1/4 cup, chopped)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onions and minced garlic. Sauté until the onions become soft and golden, approximately 10 minutes.
- Stir in the chopped tomatoes and cook for an additional 5 minutes until the tomatoes break down.
- Pour in the fish stock, then add the diced potatoes, saffron, salt, and pepper. Bring the mixture to a boil.
