Suquet de Peix is a delightful traditional Catalan fish stew, celebrated for its vibrant flavors and hearty ingredients. Ingredients

Olive oil
3 tablespoons
Onions
2, finely chopped
Garlic
4 cloves, minced
Tomatoes
4, ripe, chopped
Fish stock
4 cups
Potatoes
2, medium, peeled and diced
Mixed seafood
1 pound (e.g., shrimp, mussels, and white fish)
Saffron
1/4 teaspoon
Salt
to taste
Black pepper
to taste
Fresh parsley
1/4 cup, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onions and minced garlic. Sauté until the onions become soft and golden, approximately 10 minutes.
  3. Stir in the chopped tomatoes and cook for an additional 5 minutes until the tomatoes break down.
  4. Pour in the fish stock, then add the diced potatoes, saffron, salt, and pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.
  6. Add the mixed seafood to the pot and cook for another 10 minutes, or until the seafood is cooked through and tender.
  7. Finally, stir in the chopped parsley and adjust seasoning if necessary. Serve hot with crusty bread.
