Homestyle Tamale Pie
Our Homestyle Tamale Pie is a delightful mix of warm, savory flavors wrapped in a delicious cornbread crust. This dish, inspired by traditional Mexican tamales, offers the comfort of home-cooked meal, with a flavorful ground beef filling brimming with tomatoes, corn, and olives, all beautifully seasoned with chili powder and cumin. The pie is then topped with a fluffy, golden cornbread crust that has been kissed by a layer of melted cheddar cheese. This is the epitome of hearty, satisfying comfort food.

Ingredients
- Cheddar cheese
- 1 cup, shredded
- Milk
- 1/3 cup
- Egg
- 1
- Cornbread mix
- 1 (8.5 oz) package
- Salt
- 1 teaspoon
- Black pepper
- 1/2 teaspoon
- Cumin
- 1 teaspoon
- Chili powder
- 1 tablespoon
- Black olives
- 1/2 cup, sliced
- Corn kernels
- 1 cup, fresh or frozen
- Diced tomatoes
- 1 (14.5 oz) can
- Garlic
- 2 cloves, minced
- Onion
- 1, chopped
- Ground beef
- 1 lb
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is no longer pink. Drain any excess fat.
- Add the tomatoes (with juice), corn, olives, chili powder, cumin, salt, and pepper to the skillet and stir to combine. Simmer for 5 minutes to allow the flavors to meld together.
- In a separate bowl, combine the cornbread mix, egg, and milk. Stir until just combined, but don't overmix to ensure a fluffy cornbread topping.
- Transfer the beef mixture into a 9x13-inch baking dish. Evenly spread the cornbread batter over the top of the beef mixture.
- Bake in the preheated oven for 20 minutes, or until the cornbread is golden and a toothpick inserted into the cornbread comes out clean.
- Remove the pie from the oven and evenly sprinkle the cheese over the top. Return to the oven and bake for an additional 5 minutes, or until the cheese is perfectly melted and bubbly.
- Allow the pie to rest for 5 minutes before serving. This will make it easier to slice and serve.
