Homestyle Tamale Pie

Our Homestyle Tamale Pie is a delightful mix of warm, savory flavors wrapped in a delicious cornbread crust. This dish, inspired by traditional Mexican tamales, offers the comfort of home-cooked meal, with a flavorful ground beef filling brimming with tomatoes, corn, and olives, all beautifully seasoned with chili powder and cumin. The pie is then topped with a fluffy, golden cornbread crust that has been kissed by a layer of melted cheddar cheese. This is the epitome of hearty, satisfying comfort food.

Ingredients

Cheddar cheese
1 cup, shredded
Milk
1/3 cup
Egg
1
Cornbread mix
1 (8.5 oz) package
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Cumin
1 teaspoon
Chili powder
1 tablespoon
Black olives
1/2 cup, sliced
Corn kernels
1 cup, fresh or frozen
Diced tomatoes
1 (14.5 oz) can
Garlic
2 cloves, minced
Onion
1, chopped
Ground beef
1 lb

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is no longer pink. Drain any excess fat.
  3. Add the tomatoes (with juice), corn, olives, chili powder, cumin, salt, and pepper to the skillet and stir to combine. Simmer for 5 minutes to allow the flavors to meld together.
  4. In a separate bowl, combine the cornbread mix, egg, and milk. Stir until just combined, but don't overmix to ensure a fluffy cornbread topping.
  5. Transfer the beef mixture into a 9x13-inch baking dish. Evenly spread the cornbread batter over the top of the beef mixture.
  6. Bake in the preheated oven for 20 minutes, or until the cornbread is golden and a toothpick inserted into the cornbread comes out clean.
  7. Remove the pie from the oven and evenly sprinkle the cheese over the top. Return to the oven and bake for an additional 5 minutes, or until the cheese is perfectly melted and bubbly.
  8. Allow the pie to rest for 5 minutes before serving. This will make it easier to slice and serve.

Tips

  • 💡 For a vegetarian version, replace the ground beef with an equal amount of cooked lentils or black beans. For a spicier kick, you can add a chopped jalapeno to the beef mixture, or a dash of hot sauce to the cornbread batter.
