Tandoori spice mix

Turkey breast (skinless, boneless)
1.5 pounds
Plain yogurt (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, combine the tandoori spice mix, garlic powder, cumin, coriander, turmeric, cayenne pepper, salt, and grated ginger to create the spice rub.
  3. Rub the spice mixture generously all over the turkey breast, ensuring it is well coated.
  4. In a large oven-safe skillet, heat the olive oil over medium-high heat until shimmering.
  5. Carefully place the turkey breast in the skillet and sear for 3-4 minutes on one side, until lightly browned.
  6. Flip the turkey breast and pour the lemon juice into the skillet, allowing it to mingle with the spices.
  7. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the turkey reaches an internal temperature of 165°F (74°C) and is cooked through.
  8. Remove the skillet from the oven and let the turkey rest for 5 minutes before slicing.
  9. Serve the sliced turkey with a dollop of plain yogurt and garnish with fresh cilantro.
